Chus note
Peaberry is not a coffee variety but a natural "mutant". Usually, each coffee fruit contains two flat-shaped coffee beans, but sometimes only one bean develops in a single fruit. Since there is only one, this bean will grow larger and have a rounder shape.
Roasting peaberries is different to roasting other coffee beans. Because of their round shape, they are able to absorb heat evenly and give off a very characteristic flavor.
