  • Green tea: 25g
  • Hot water: 230ml
  • Filtered water: 1.8l
  • Sugar: 300g
  • Scoby culture: 1
  • Starter tea: 280ml
  • Bananas: 1.5 (or other fruits like strawberries, mangoes, pears, chopped or mashed)
  • Thin cloth: 1 piece to cover the mouth of the jar
  • Glass jar


To start making fruit kombucha, steep 25g of green tea in 230ml of hot water for 10 minutes. You can find high-quality Vietnamese teas on Chus.

Next, dissolve 300g of sugar completely in the tea. Then, strain out the tea leaves.

Pour 1.8l of filtered water into the glass jar along with the brewed tea, then stir well. It's important to use glassware and avoid stainless steel utensils.

  • Pure green tea: 20g (you can substitute with black tea)

Boil 200ml of water, turn off the heat, and steep 20g of green tea for 5 - 10 minutes. Add 200g of sugar and stir until completely dissolved. Let the tea cool to room temperature.
