Chus note
What are the differences between ripe honey and immature honey:
- Ripe honey requires more time to form and harvest, hence the rarity and the more expensive price.
- Ripe honey has a thicker profile because of the lower water content. Immature honey is more watery, easier to ferment and generates gas after a period of time.
- Ripe honey has higher nutritional content and a richer, deeper, sweeter flavor compared to immature honey.
- Ripe honey can be preserved easier and the color doesn’t change much over time. Although honey is known to last forever, the excessive amount of water in immature honey can still impact its quality after a long time.
